Serves 4

3 cups light olive oil, for frying
300g pot falafel mix (available from supermarkets)
4 ABE’S Real Sesame Bagels, split in half
2 iceberg lettuce leaves, shredded
1 carrot, coarsely grated
1/3 cup prepared hummus
Chilli tomato sauce (optional)

Heat oil in a small saucepan until a crust of bread sizzles and turns golden brown. Fry tablespoonfuls of the falafel mix in hot oil until golden brown and crisp. Drain on paper towels. Toast bagels. Toss shredded lettuce and grated carrot together and pile onto bagel bases. Top with 3 falafel, a good dollop of hummus each and the bagel lid. Serve with chilli tomato sauce on the side.
