Serves 1
1 Organic Wholemeal ABE’S Real Bagel
pumpkin, peeled and sliced
Portobello mushrooms
¼ red capsicum
olive oil
salt and pepper
balsamic vinegar
2 Tbs basil pesto
baby spinach leaves
feta cheese, crumbled
1 Roast vegetables until pumpkin is tender. Drizzle with oil and balsamic.
2 Split and toast bagel and smear with pesto.
3 Top with roast veggies, spinach leaves and crumbled feta.
