Serves 1
1 Blueberry ABE’S Real Bagel, split in half
6 canned peach slices, drained of juice
2 Tbs cream cheese
pinch ground ginger
½ cup raspberries
2 sprigs fresh mint
1. Squeeze a little lemon juice over fresh peach slices, sprinkle with sugar. Refrigerate for 1 hour. Or use canned peach slices.
2. Combine cream cheese and ginger with a little of the juices surrounding the peach slices and spread this mix over each bagel half.
3. Top with peach slices, raspberries and decorate with mint.
