A little butter, for greasing the tins 3 blueberry or cinnamon and raisin ABE’S Real Bagels, thinly sliced 1 cup organic blueberries, fresh or frozen 3 small organic eggs 400ml can organic coconut milk 1/2 cup organic honey 1 tsp vanilla extract 100g dark chocolate, melted, to decorate Icing sugar, to dust

  1. Preheat oven to 170°C. Lightly grease 6 individual cake or muffin tins.

  2. Pack the sliced bagels into the prepared tins, interspersing some blueberries between the layers. Press down well.

  3. Beat the eggs, coconut milk, honey and vanilla together in a bowl. Pour this mixture evenly over the sliced bagels in the tins. Set aside for 10 minutes for the bagels to completely absorb the liquid.

  4. Bake for 35 to 40 minutes. The cakes will inflate slightly when cooked, deflating again once cold.

  5. Cool a little before removing from tins. Serve warm or cold, drizzled with melted chocolate and dusted with icing sugar.
