Thoroughly combine 4 medium sized tomatoes, (chopped), 1 1/2 tablespoons minced fresh garlic, 1/8 cup fresh basil, 1/4 cup chopped coriander, 1 1/2 tsp lemon juice and freshly ground salt and pepper to taste. Refrigerate mixture for several hours. When ready to serve, bring to room temperature. Brush cut sides of bagels with olive oil and toast lightly in toaster oven. Spoon tomato mixture onto bagel halves and serve open-face.
